As well as being low in fat and containing plentiful amounts of Vitamin C and B-Vitamins, coconut water presents the same electrolyte levels as human blood plasma, making it a great replacement for lost fluids. Research suggests it may reduce the risk of developing atherosclerosis, where plaque from high cholesterol builds up along the walls of arteries. It is also used to aid nutrient absorption in people with digestive disorders, and encourage healthy weight loss in others. Lauric acid also has antiviral and antibacterial properties, hence coconut milk and oil could play a role in protecting the body from infections and viruses.

Cooking at High Temperatures

The fatty acid profile of coconut oil gives it a higher smoke point than many traditional polyunsaturated or monounsaturated oils. The smoke point is the temperature at which the oil breaks down, and toxic by-products may be produced. Because of its above average smoke point, coconut oil may be more suitable for use in cooking at high temperatures than other oils.  It is also a versatile fat source that exists as a solid at room temperature, but liquid when heated.
